About this cut

Jerky is the oldest way there is to keep meat, and it's made from the lean cuts, the ones with no fat in them to turn. Ours come off the same Black Angus we raise for everything else.

Good for

Road trips, lunch boxes, long days outside, and the desk drawer where the vending machine snacks would otherwise end up.

From our kitchen

There's a bag in the truck and a bag in the barn, and neither one has ever lasted a week.

It's what goes in a pocket before hay season and what gets handed across the seat on a long drive. We keep a bag in the glovebox for Saturday mornings, because the market starts at eight and breakfast doesn't always happen first.

Storage

Keep it somewhere cool and dry until you open it. Once it's open, refrigerate what's left.
